Checklist for setting up the concession stand at DC West Middle School

  • Unload the supplies from the car. 

  • Get the nacho cheese machine ready.  DO THIS FIRST because it takes a while for the cheese to warm  up.  Just plug it in to turn it on. Load a bag of cheese by attaching the dispenser nozzle to the bag and then putting the bag in the machine. Put the metal plate on top of the bag, and then put another sealed bag on top of the metal plate. Put the cover back on the machine. Put a bag of chips, nacho boats, and a plastic glove next to the cheese machine. Note: if there was an event within the last seven days, the cheese machine may already be plugged in.  That's ok.

  • Make the first few batches of popcorn. To make popcorn, turn on all three switches. Let the popcorn machine warm up for about 5 minutes. Then add 1/2 cup oil, 6-8 oz of popcorn, and 1 tsp of salt. Pour the salt over the popcorn before putting it in the machine. Use a disposable cup to measure the oil. Wait until the popping almost stops. Then dump the kettle and make a second batch immediately. After the second batch is complete, turn off the top two switches (the kettle heat and the agitator. For future batches, there is no need to let the kettle heat up first. Place bags for popcorn next to the machine. 

  • Get the drinks ready. There should be several coolers of ice brought over from Concordia, plus at least one empty cooler.  Fill the empty cooler with red Gatorade and top it off with ice.  Fill other coolers with blue/purple Gatorade and water, and top off those with ice. Put the coolers under the tables that are in the center of the room. Fill the refrigerator with canned pop, placing the warm pop behind any cold pop that is already there. Make sure all types of pop are in the refrigerator. See the price sheet for the types of pop. 

  • Prepare hot dogs. Put the electric frying pan for the hot dogs in the corner to the left of the serving counter. Add a bottle of water and warm up about a dozen hot dogs. Put buns, large trays, tongs, and a plastic glove nearby. Put the ketchup and mustard on the serving counter. 

  • Get the pickles out of the refrigerator and put on the serving counter with tongs and small serving trays. 

  • Put the candy on the tables in the center of the room. Arrange it so that people can see what types of candy are available from the serving counter. 

  • Put the assorted chips on the tables in the center of the room.

  • Put the money box on the table in the center of the room.

  • Tape the price sheets on the frame of the serving window (on each side).  Put one set of price sheets on the serving counter. 

  • If there is a meal deal get out a stack of plates and put them on the center table.

  • Pour some jalapeno peppers and a fork into a nacho tray, and put the tray on the serving counter.

  • Put napkins on either end of the serving counter. 

You are ready to serve!
